The nature of these peaberry coffee beans from Kenya causes them to be quite dense and packed with sugars, ripe for a wide array of caramelization reactions within the roasting process. A well-developed roast prepares them for a generous coat of rich and complex 62% dark chocolate from Huila Colombia, not far from where some of our proudest single origin coffees are grown. The soil in this area adds a depth of familiar flavor to the composition, resulting in a highly intentional and artisanal reimagination of a modern delicacy.
